I actually reviewed an earlier incarnation and probably a younger whisky as well all the way back in December 2012. This is a corn whisky made from roasted heirloom blue corn.

. FINISH Medium Dark sweets wood grain and dark fruit BALANCE BODY FEEL Decently balanced round heavy. I found the finish to be well-rounded and polite with some of those dried fruit flavor notes turning into a sherried tannic essence on the finish.

Today we taste and review Mellow Corn Whiskey and compare it to Balcones Baby Blue. Again this is for corn. A good range of flavors this is where the Balcones True Blue really shines.

Sweet heavy corn flavor and truly decadent. Specifically they are using blue corn a variety of corn that is grown. In fact most of the whiskies in the Balcones range are corn.

Young but very well crafted the distillate comes through. Made from roasted blue corn a type of flint corn like sweet corn but with a distinctive blue colour. Balcones True Blue Whiskey has some added sweetness but with an added element of dark chocolate.

The Balcones Baby Blue is marketed as a corn whiskey and fittingly enough corn is the only item on the ingredients list. Hints of caramel and honey toasted corn and light chocolate are most. Waco-based Balcones is one of the most innovative distilleries in Texas with new expressions constantly trickling out of the operation.

Taking its name from this defining feature Balcones Distillery has been. This is a spunky pour thats surprisingly fun and easy to drink despite such a modest touch of sweetness and bold pops of pepper and oak with the coup de grace provided. But the flavors and aromas it has it does exceptionally well.

The latest to arrive is Balcones Texas Pot. The finish is also quite long compared to Baby Blues disappointing quick. This isnt the most complex whisky in the world its far from it.

The finish is lightly sour with more toffee and some pear but rich and spicy - the spices on the end are brilliant. Even at 100 proof there is no. Earthy and sweet corn pudding.
